Our Story

La Catrina Tamales was founded in 2022 in beautiful Boulder, Colorado. It was started by Lucy Ceballos, a Boulder resident originally from Mexico City with a lifelong passion for authentic Mesoamerican cuisine. Having grown up in Coyoacán—a vibrant cultural hub and UNESCO World Heritage Site with centuries of history, tradition, and art—Lucy’s food is storytelling passed down through generations. Tamales, she says, are “living history wrapped in leaves”, a symbol of celebration, offering, and everyday comfort.

Having quickly grown as a catering operation, La Catrina is now also operating a food cart at 1333 Pearl St mall and producing wholesale tamales and other Mexican fare, all made locally with fresh, high-quality ingredients and traditional recipes and techniques.

As a retired engineer who owned a successful manufacturing business for three decades, Lucy has high standards that blend soul with perfection, resulting in tamales with exceptional flavor and consistency.
